Thier vision is to grace the island’s indigeneous grape variety Adakarası’ with international awareness and to exploit the potential of the well-adapted cosmopolitan grape varieties in the Avşa Island’s terroir. At present Büyülübağ has 20 hectars of vineyards consisting of Cabernet Sauvignon, Merlot, Syrah, Chardonnay and Adakarası. The best fitted root stocks are chosen resulting from the soil climate analysis conducted in France. The winery construction begun in October 2004. In their four level facility, there is a tasting room at the top level with a wonderful view. Production takes place between the other three levels; the grape processing begins at the first level, with picking bins tipped on the first vibrating sorting table, then stem remover, the second vibrating sorting table and into a crusher/stemmer on this level. The tanks are at the lower level so crushed berries drained into tanks at this second level. Finally at the lowest level, there is the barrel cellar which is located under the ground level, water insulated, therefore it has a 70% annual average of humidity and 14º C of heat. The cellar consists of Burgundy and Bordeaux style 225 lt. French oak barrels. With thier gravity flow winery, which is the first and only one of its kind in Turkey, Büyülübağ ensures that wine movement is slower, and therefore gentler and more controllable.
